We thought Corkscrew BBQ in Spring, TX would be a good little trip from Houston. Once we got there, we realized that we didn’t budget nearly enough time for the trip.
Arriving at Terry Black’s Barbecue during dinner time led to a thirty-minute wait. It also led to an opportunity to notice a few things about the place.
We may have been in Springdale, UT, but when we mentioned Giddings, TX to our hosts, they began telling us an improbable story that, while set in Texas, was full of Utahn industriousness.
You get to towns like Bryan, Texas by driving long miles. You drive past grazing cattle. You drive past trees of oak and mesquite. You drive past the ingredients, what the barbecue is made of.
Our visit to Schoepf’s was an aberration. We didn’t explore Belton, TX, we sat and took our time, and we didn’t try their brisket. None of that means that we didn’t like what Schoepf’s had to offer.
Smithville, TX attempts to distinguish itself by being the setting for a Sandra Bullock movie. But if someone from Smithville really wants to brag, they should talk about Zimmerhanzel’s BBQ.
